Mexican Salad

A delicious Mexican Salad made with your homemade Chili Con Carne. It's a great way to use up any left over chili from a previous meal. Topped with guacamole dressing and sour cream.

Make the chili ahead of time. Once you have the chili made, you can make a number of different dishes such as Chimichangas, Chili Noodle Casserole and delicious Chili Stuffed Burritos.

1 small head iceberg lettuce, shredded
8 radishes, thinly sliced
1 cup green onion, chopped
1 cup shredded cheddar cheese
3 medium tomatoes, chopped
Corn chips

Guacamole Dressing:
1 clove garlic, slightly crushed
1/2 cup salsa verde1 large avocado, peeled and pitted
1 Tbl lime juice
1/2 tsp salt
Pinch sugar
2 to 3 drops hot red pepper sauce
3 Tbl minced onion
1/4 cup sour cream

3 cups chili con carne


Prepare the dressing by rubbing a serving bowl with garlic then discard garlic. Drop in the peeled avocado and mash with a folk. Add half the chopped tomatoes, lime juice and gently mix in the onion and sour cream. Press the avocado pit into the center of the dressing, which will help retain the color. Remove before serving. Cover and chill dressing until serving time.

Place each salad item in separate bowls and chill. Put chips in another bowl.

Heat the chili con carne. To serve, arrange bowls of vegetables, cheese and chips around the hot chili. Each person ladles chili on top of a bed of lettuce on each plate then helps themselves to various toppings, ending with Guacamole Dressing.
