Serve this wonderful Sun-Dried Tomato Dressing on a blend of spring mix salad. To make a thick dressing for a sandwich just omit the water.
1/2 cup oil packed sun-dried tomatoes
1/2 cup apple cider vinegar or red wine vinegar
1/4 cup water
4 basil leaves
1 tsp chopped chives
1 clove garlic, pressed
1 tsp sugar
Salt and fresh ground black pepper to taste
1/2 cup extra virgin olive oil
Combine all ingredients except oil in a blender. Pulse until tomatoes are finely chopped. Add oil slowly, pulse as you drizzle in the oil until well blended. Best is made at least one hour before serving.
