Southwest Potato Salad

When it is BBQ time this Southwest Potato Salad is the perfect dish. It goes well with any meat off the grill having such a nice variety of flavors that blend together perfectly. My neighbor friend Sarah from Texas brought this to one of our backyard bbq's. Try it out and let me know what you think.


INGREDIENTS:
6 cups cooked, peeled and cubed potatoes
1 1/2 cups shredded cheddar cheese
1 15oz can black beans, rinsed and drained
2/3 cup chopped sweet pickled peppers
1/2 cup diced celery
1/3 cup chopped green onion
3 Tbl fresh minced cilantro
3/4 cup ranch style salad dressing
1/2 cup salsa
1/2 tsp salt


In a large bowl, combine first 7 ingredients and set aside. In a small bowl mix dressing, salsa and salt, pour over salad mixture and toss to coat evenly. Cover and put in refrigerator for at least one hour before serving. Flavors need time to blend.

Time Saver: Used canned potatoes and bottled salad dressing and this dish can be made quick and easy
