Chutney Spinach Salad

To start this wonderful Warm Chutney Spinach Salad, toss together in a decorative glass salad bowl the Spinach, Oranges, Cranberries, Raspberries, Cashews and Pecans. Set to the side and make the warm chutney dressing.

Not only is this salad pleasing to the pallet, it is also pleasing to the eye which is why I suggest a nice glass bowl for serving.

Warm Chutney Dressing:
6 Tbl Balsamic Vinegar
1/3 cup bottled mango chutney
2 Tbl Dijon mustard
2 Tbl Honey
2 Garlic cloves, pressed
1/4 cup olive oil


Cook first 5 ingredients in a saucepan over medium heat, stirring constantly for 3 minutes. Stir in oil, blending well and cook 1 minute. Cool slightly so it is not boiling hot, pour over Spinach mixture and serve immediately.
