Seasoned Tomato Sauce

Have lots of tomatoes growing in your backyard garden? Make this quick and easy to make seasoned tomato sauce to use with any Mexican food recipes such as Chilies Rellenos, Tamales and Empanadas.



Ingredients:
1 Tbl Vegetable shortening
1/4 cup green onion, chopped fine
1 clove garlic, pressed
1 - 15oz can tomato sauce
1/2 tsp salt
1/2 tsp crushed oregano

Directions:
Heat shortening in small pan. Add onion are garlic, saute 1 minute. Stir in tomato sauce, salt and oregano, heat thoroughly, Serve warm over Chile Rellenos.

If planning on making a big batch for later use, here are some tips for canning.

Use the hot water bath method or pressure canning. Either method works fine for canning tomato product.

Always wash and sterilize your equipment. Jars, bands and lids.

After jars have cooled, test for seal by pressing down on the center of the lid. The lid should not move when pressed.

Be sure to label canned jars with content and processing date. Store in cool place.
